Our product range is born from a family business concept. It is a local product, blended and bottled in the county of Norfolk and is distributed and marketed by Nuno and Carmen De Gouveia under the family business name of 'The Saucerer'. The Saucerer was selected as a brand name and image reaching deep into the historical mythical roots of England were in an age gone by Sorcerers, Druids, Wizards and Magic ruled the land and hence the Magical Saucerer Range was born. We are passionate about our product and our business, insisting on personally introducing our product range via a one-on-one tasting, specially prepared and presented for you by Nuno at various Farm Shops and Festivals throughout the UK. The origin of the chilli is traced back to the Amazon jungles, virtually unknown outside this area until Columbus sailed to the Americas and brought back the first specimens to Europe in the early 1490's, but evidence has been found of humans using chillies as far back as 5200BC in Central & South America.It is also known that the Incas and Aztecs consumed chillies with just about every meal, they were also known to worship the chilli! The chilli spread across Europe, Africa and the Far East via the trade routes frequented by the Spanish and Portuguese sailors and merchants.It was only in the 1800's that extracting the active ingredients from the plants was perfected and this is known as Caspian. The capsaicin has neither flavour nor colour and is an alkaloid. When capsaicin makes contact with the human body, be it skin or via the mouth, this causes a burning sensation depending on the purity and amount of capsaicin.On contact the brain receives the message of pain and produces endorphins, a natural painkiller that promotes a sense of well being. Chillies are used in growing numbers for medical and veterinary purposes.Chillies also have a high content of Vitamin C and A which are anti-oxidants used by the human body to soak up free radicals. Lutein is found in red chillies and Alpha-carotene in yellow and orange chillies and peppers making chillies in general a very healthy food.The heat in chillies is produced by chemical compounds called Capsaicinoids. Produced by the glands in the placenta of the chilli and commonly known as capsaicin or chillies seed. Best known and measured in Scoville heat units.This method of rating the heat in chillies was developed by Wilur Scoville back in 1902 and through time a more scientific and computerised method has been developed and is used today allowing for improved accuracy in measuring minimum and maximum values that can be expected from the great variety of chillies hence allowing us to grade chilli sauces into categories of medium, mild, hot and so on.The chart on the left will give you an indication of chilli varieties found and what their Scoville heat measurements are. These are just a few of the chilli varieties found today as there are thousands of different types of chillies available.To help soothe the chilli burn, commonly dairy products are consumed although be warned, there are chillies so hot out there that no amount of milk will help you!
